Ok so I forgot to take photos but the recipe is so good and so easy!
2-3 pounds of stew meat
1 large 1 small can red enchilada sauce
2 beef bullion cubes
combine all of those in the crock pot and cook on low for 7-8 hours.
shred the meat and return it to the sauce. use a slotted spoon and place the meat into the tortillas. I also put homemade black beans in them. Put a bit of sauce in the pan then place the enchiladas in it. Cover with more sauce and cheese. Bake at 350* for around 20 minutes or until the cheese is melted.
Serve with shredded lettuce, diced tomatoes, and sour cream.
Makes around 12 enchiladas.
