Take about 1 1/2 lbs of chicken
1/2 diced onion
2 large carrots, sliced
1 to 2 stalks of celery, diced
place them into the crock pot and fill the crock pot 3/4 full of water. I also use some fresh cracked pepper. Turn that baby on low and let it simmer until about for about 6 hours. Your home will smell amazing so hope that you have guests coming over for a play date! It will make you feel like Betty Crocker!
Remove the chicken carefully because it will be very hot. Remove the bones and replace it back into the crock pot.
In a mixing bowl combine
1 can cream of chicken
1 can cream of celery
1 package of ranch salad dressing mix
wisk them together until there are no lumps. I then add a bit of the broth to this to thin it out, it makes combining it into the soup easier. Then poor all of it into the crock pot.
Add 1 1/2 cups of medium grain rice and let it cook for another 2 hours or until the rice it tender. Stirring occasionally.
Serve and enjoy. It makes alot so it is an easy dinner to serve to company or to your house full of sick kids! I use chicken thighs or drumsticks because they are cheaper and I feed alot of people. So if I can save a few dollars on dinners then we are all happy.... the kids, me, my hubby, and the bank. But you can use whatever cut of chicken that you enjoy the most. This recipe is so easy to tweek to your favorite things. You could not do the rice but add noodles instead. Or other veggies. It also reheats very well. With any dish that has rice in it you know that the rice will continue to absorb the liquid. So when you reheat it just add a bit of water. It will taste the same but not be a chicken paste :)
